Mika our kitchen chemist has been developing new flavour profiles to enjoy an explosion of sweetness. We specialize in creating unique and delicious cakes, cookies, bars, tarts and other sweet treats. French Filled Beigtoast

Cinnamon Raisin Beigtoast with Peanutbutter Banana Peanutbutter with Banana's and chocolate cream cheese has to be by far the most craziest thing I have ever made! I fried this crazy sweet delight in butter and covered it in icing sugar! This treat is just that - A TREAT! Once in a blue moon and not a daily dessert.

I also made these bad boys Cinnamon Raisin Beigtoast with Cranberry Peanutbutter and a berry nut trail mix with chocolate cream cheese! 

So, this is me cooking my way.

Indulge in New Orleans

Something that I had done without is indulging in Beignets, King Cake, Pralines, Bread Pudding and Roman Candy! All sweet treats known in New Orleans, among other places but each of us knows what place in the world that makes the best!

What could be better than the deep fried Beignets? Dough fried than covered in white sugar powder and served hot on the plate! They are a delightful square cut piece of perfection in your mouth with a side of milk chocolate or what I prefer caramel! These Beignets came to light in the 18th century and have become the hottest sweet treat 'til this day!

King Cake is huge during Mardi Gras but you can still find them in café's  The odd thing about the cake is the a small plastic babydoll is baked right in the cake. It represents baby Jesus. The person to get the slice with the baby was to be the next host at the next party! Mardi Gras is rooted from Catholicism. This cake is filled with pecans, raisins, brown sugar and cinnamon. During Mardi Gras it is covered in purple, gold and green sprinkles. Canned cherries and pecans are used instead of the sprinkles out of Mardi Gras season.

 Paula Dean makes a great Bread Pudding that is to died for. Somehow everything in the South taste better! Perhaps it is that fact that they love butter and love food even more. Butter seems to go well with any dish!

Pralines are a sweet treat that you can have over any ice cream or desserts. I love them with French Vanilla ice cream and apple pie. You just cannot beat the pairing of these sweet tasty items! Or maybe it is just me that cannot say 'NO, I will pass on that dessert!' Ya Right!

Roman Chewing Candy is Taffy that comes in vanilla, chocolate and strawberry flavours. This treat has been made by a family since 1915 by the same family! They still sale these treats from the same mule cart. 

New Orleans has inspired me to come up with some new flavour profiles to add to our menu using the ingredients from these New Orleans extraordinary desserts and sweet treats. Special, Thank you

It is not always easy finding the right people to work with or for you. But I have to say that I am very lucky to have Chantal (Baking Assistant in Training) this special person work her fingers off helping me with this cake and I could not have done it without her help! 

My assistant who drives around with the longest list ever to find items that at times I do not think exist, nor does he! 

I also need to thank a special friend who came through for me at the last minute. He was able to find the non-existed things that were missing from my long list!

I am truly grateful and will always hold these important people in the highest regards.

Doctor Who - Tardis Cake

We had an odd order last week for The Tardis Cake from Doctor Who. I will admit I had heard of the show but had never seen it so I did not know what 'Tardis' was. I had to look it up and when I did I have to say that I was super shocked! I mean I have never made anything like it before and was not sure I was going to take the order.

In the end I decided that I am willing to try anything. Learning new cakes styles and designs is apart of what I do. Being self taught is a challenge but I am up for them. 

Putting together a few photographs together to see how I was going to go about this cake was fun because I really got to see what everyone else was doing. I had my sister, an assistant and a friend find me everything I needed to create the Tardis Cake. Which was not an easy task for them but they are the greatest and pulled through for me.

The cakes were Milk Chocolate and French Vanilla. Vanilla buttercream and Vanilla Royal Blue fondant was found. Dowel Rod were used to hold the cake into place. Edible pens was used for the posted notice on the door and cookie cutters for the windows and lettering. I also used edible dust for shading. Craft brads for the door handles and key hole.



Of course it is always sad to see a cake that took a lot of hours to make get cut into but that is the whole point! At the end of the day we had fun making the Tardis Cake and our clients had a great time at their Theme Birthday Party!

Cassava Cake

Cassava Cake is both sweet and mosit. Some say that is has a bitter taste but this weekend I had the Cassava Cake from Pansit Catering at The Taste of the Hills. It was a sweet cake and I will admit that I had to have another one because it was so delicious. 

Now, I have had my mind spinning from this little sweet gem that I have no choice but to come up with the perfect Cassava Cupcakes! That is right! Your Kitchen Chemist will be working hard in the Kitchen Lab to make this sweet treat and have it on our menu!

Traditional 'High Tea Time'

It was High Tea Time for our family and friends last week! What makes our 'High Tea Time' different is we have it at midnight for all the ladies. We made many different cakes, cookies, puddings, cinnamon raisin French toast, truffle and more. Of course we had out tea as well. Add some fruit, macaroons and chocolate and this Tea Time was a party like no other!

The Tea Time was a special one as we have some new additions in our family and announced a few more bundle of joys on their way! This January, February and March!

It is always fun dressing up and being very girlie. We have so much fun talking to each other and laughing over so many amazing memories. The little girls growing up in this circle have always loved this tradition and it is one that we will always continue to enjoy for years to come!

Any Time Breakfast - Dessert

Breakfast is my favourite meal of the day if I had to choose! Although, I believe you could have breakfast food any time of the day or night! 

I love to make Fresh Blueberry Phyllo Pies with ricotta cheese or cream cheese filling. This sweet treat is best when you are able to pick fresh blueberries during the summer time. 

The latest Gastropost mission is 'Summer Indulgences' so, these pies are a special summer indulgences for my family. I love to make these with raspberries, strawberries, cherries or bananas too. They are great for breakfast or as a dessert.

Instagram Hashtag: #gastropost

We have been posted a few times in the National Post - Gastropost! This online site has been amazing. They have these missions, food missions for food lovers and anyone could do it, which I personal think is awesome! 

Being able to share your love for food with everyone is great! Not only do you have admires for the food you post on Instagram or any other Social Media, you get to see other peoples' post, too! You get all these awesome ideas for cooking, baking, presentation and so much more!

We live in a big, NO WAIT! A HUGE world and I love viewing all sorts of things but food is number one. I have seen photographs of food from all over the world from chefs', mothers', fathers', teenagers', children, students', men and women from every where in the world! For me - that is GREATNESS! What a way to bring people you do not know, together!

Nutella & Melted White Chocolate Shortbread Cookies


 How could anyone say "NO" to these little sweet treats? I can tell you from all the orders I have received not many are saying no. These nutty chocolate bites have been a HUGE hit for us and we are happy to put them on the menu as a regular item! A shortbread chocolate chip cookie with melted white chocolate added to Nutella and cream cheese. They melt in your mouth and dance on your tongue. We are so happy you all loved them. Thanks so much!

Desserts in a Jar

I have always thought that the person who came up with desserts in a jar was very clever! I love the idea of putting sweet treats inside a cute jar and filling them in layers. Tie ribbon and spoon to it and you have a great presentation. From this order I layered Lemon Cake, Strawberry Mousse, Lemon Custard and topped it with a macaroon. I made them pretty in pink with the labels and use pink and yellow ribbons. I was lucky with the jars and found a few different shapes as well the seals were different in colours. These jars where purchased at the dollarama in Oshawa and made these sweet treats in a jar a good conversational piece at the birthday party!
